HI! okay so since i’m home sick and so many people have asked for the recipe for these muffins.. here it is!

Pumpkin Muffins w/ Maple Cream Cheese Filling

  • cups flour (i used all purpose but you can probably use whole wheat and it’d be fine)
     
  • 1.5 teaspoons cinnamon
     
  • teaspoon nutmeg
     
  • teaspoon ground cloves
     
  • teaspoons pumpkin pie spice
     
  • teaspoon salt
     
  • teaspoon baking soda
     
  • 4 eggs
  • cups sugar
     
  • cups pumpkin (NOT pumpkin pie filling, i used organic canned pumpkin)
     
  • 1 1/4 cups vegetable oil
     
  • choppedpumpkin seeds (optional) or walnuts (optional) or pecans (optional)
     
    Filling:
  • ounces cream cheese
    2 tablespoons butter
    Maple syrup (or powdered sugar and vanilla extract if you aren’t into maple things) and if you opt for syrup definitely don’t use mrs. butterworth or anything like that, use pure maple syrup

    Cooking!

    1. preheat oven to 350.

    2. take your cream cheese and blend with butter and sweetener you choose (i poured about 4 tablespoons of pure maple syrup into mine.) and then refrigerate.

    3. mix all ingredients together (except filling ingredients and nuts). do not be alarmed if batter is lumpy. muffin batter isn’t like cake batter, it’s SUPPOSED to be lumpy!

    4. fill greased muffin tins half full.

    5. put dollops of chilled cream cheese mixture in the center of each muffin (or muffin-to-be if you wanna get technical)

    6. spoon muffin batter over tops of cream cheese dollop. (enough to cover but not much more than what you need to JUST cover the cream cheese mixture.)

    7. sprinkle with chopped nuts

    8. bake at 350 for 20 minutes. (or until fork inserted into top of muffin comes out clean. DO NOT insert into cream cheese filling!)

    9. remove from oven and let cool for 5 minutes. 

    10. remove from muffin tin to cooling rack. don’t eat them (even if tempted) until fully cool. the hot cream cheese filling WILL burn you. if you’re impatient like me, you can shove the one with the retarded top into the fridge for 10 minutes and then eat it.
